Amaretti recipe

I was given a box of Amaretti Morbidi at Christmas – the most delicious light and gooey almond biscuits.  These are naturally gluten free as they only contain sugar, almonds and egg white.  They are seriously tasty and would be good after dinner, or just with a cup of tea.  My gluten-eating husband spreads strawberry jam on them!

Here is the very easy recipe:


200g ground almonds
200g caster sugar
3 large egg whites
.5 tsp almond extract (if preferred)
pinch of salt
icing sugar and flaked almonds

Heat the oven to 170 degrees

Mix the almonds, sugar and salt together well.  Beat the egg whites until stiff and peaky.  Gently fold the almond mixture into the egg white using a large metal spoon, until you form a light paste.

Roll small balls (about the size of a walnut) onto a baking sheet covered in greaseproof paper.  They spread, so leave space between them. If you wish, you can sprinkle flaked almonds on the top

Bake in the oven for 14-18 minutes until they are just turning a very light golden colour (see picture).  Sprinkle icing sugar over while still warm.
